Head gasket type

I have been getting some mixed messages from various ''experts'' about the type of head gasket to use on an engine I am building.
I have always used the copper/steel laminate type. [That come in the ''Payen'' gasket kits for the twin cam].
Has the thinking changed?
I have been advised that the new head gasket approach is a ''cometic/composite'' type or one using a laminate of stainless
steel shims.
The head itself has been around a while and was found to have some ''softness'' in a few areas, but not considered to be of any great concern by the very experienced guys in the machine shop.
Advice would be appreciated.
